Spinach, Feta & Tomato Egg Bites

Who is looking for the ultimate grab-n-go breakfast or snack? I have you covered! I can’t stop making different renditions of Egg Bites using my muffin tin. Here’s a recipe using spinach, feta and tomato, but you can truly create any veggie and cheese combination you fancy (think bell peppers, zucchini, goat cheese, cheddar cheese…). I store these in my refrigerator for the week and simply reheat them in my toaster oven. This recipe is so simple and super delish. Enjoy!

INGREDIENTS:

6 large eggs

½ cup baby spinach, roughly chopped

¼ cup crumbled feta cheese

¼ cup diced tomato

¼ teaspoon ground black pepper

PREPARATION:

Preheat oven to 350ËšF (180ËšC).

Grease a six-cup muffin tray with extra virgin olive oil or avocado oil spray.

In a bowl, add the eggs, spinach, feta, tomato and pepper, and stir to distribute the ingredients.

Distribute the mixture evenly between the muffin cups.

Bake until the eggs are set, about 20 minutes.
