Simple Roast Chicken

Veteran dietitian and food lover Amy Shapiro of Real Nutrition NYC swears by this easy, fall-off-the-bone roast chicken recipe. We tried it and we fully agree! It’s a staple recipe in our households as it is loved by adults and children alike. Give it a try!

Serves 8

INGREDIENTS:

  • 1 whole chicken, 5-6 pounds (organic, pasture-raised)
  • 1 lemon, halved
  • 1 head garlic, cut in half crosswise
  • 1 large bunch fresh thyme
  • Kosher salt
  • Fresh ground pepper

PREPARATION:

Preheat oven to 450 degrees

Remove the chicken giblets. Rinse the chicken inside and out. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the bunch of thyme, both halves of lemon, and all the garlic. Sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken.

Cook chicken for 30-40 mins in oven at 450.

Turn off the heat and keep the chicken in the oven for another 30 minutes AT LEAST but up to 2 hours.

Serve.
